With the help of Matt Wilkinson, Red Hill winery and restaurant, Montalto have created a one off Christmas menu perfect for sharing and celebration. The produce comes from the estate's kitchen garden and tells the story of the Mornington Peninsula region.

Preparation Instructions

Merry Christmas to you and your family from us here at Montalto.

The menu is designed to have the entrees to snack on before the main with no cooking required, just pick out your favourite tableware, plate up and enjoy. I’d start the reheating process by opening up your Sparkling Rosé and having a glass.

Bring all the mains components out of the fridge well in advance, a good 2 hours before feasting. Then follow the below instructions for reheating.

For the turkey:

Turn on the oven to 180c. Place the turkey still in the bag into a large pot and fill with water, bring to a boil and simmer for 30 minutes.Carefully transfer the bagged turkey onto a baking/roasting tray and place in the preheated oven for 15-25 minutes. We highly recommended reheating in the bag this way to ensure a succulent turkey leg however if you can not simmer the bag beforehand place it in the oven until hot (1 hour).

For the bread sauce:

if you like your bread sauce warm either reheat it in the microwave or in a small pot, but I like it at room temperature.

For the gravy:

Place into a small pot or the microwave and reheat.

For the root vegetables:

Place in a tray and reheat with the turkey leg. Once warmed place onto your favourite plate, sprinkle over the feta and gremolata and enjoy.

For the garden beans:

I like to eat beans at room temperature so for me just warm the bacon dressing and toss with the beans and serve

For the duck fat potatoes:

Add to the pot of water with the bagged turkey, then empty contents onto the same tray with the turkey too.

For the Christmas pudding:

Remove outer packaging and steam over low heat for 45 min 1 hour or until heated through. Take off the plastic seal and turn it onto the serving plate. Suitable for microwave.

For the brandy custard:

I love custard so drinking it cold is fine by me but if you want to warm it up please pour it into a small pot and stir gently over a low heat stir until warm.
